I’m just back from Milan where I enjoyed some of the recent edition of Identita Golose, including a closing session celebrating Osteria Francescana, which turns 30 next month. Massimo Bottura, Lara Gilmore, and a few dozen of the Francescana Family team took over the stage to demo a couple of recipes that will appear on the next tasting menu, including a take on panettone that I’m still salivating over, and showcase a moving video on the restaurant’s history.

As part of his Masters of Fire tour, Tyler joined me on the Cookbook Fest stage for a conversation on his career and his latest, and most personal, cookbook: American Grill.
Known for his energetic and long-time presence on culinary TV shows, Tyler shares how severe childhood allergies—and therefore, a limited diet until he turned 13—shaped his relationship with food. In this episode, Tyler and I discuss his early career in restaurants, which took him from his hometown of Greenville, South Carolina to Johnson & Wales to New York City, and how he naturally fell into a Food Network gig at just the right time.

“There’s a paradigm that most creatives kind of go through early in their career where their aspirations are here, which is pretty high, and their ability is here, which is kind of low. So it's their job every single day to make sure their ability is climbing up to their aspirations, right? And that's what I tried to do every single day—just be a little better tomorrow than I was yesterday.”
In his American Grill cookbook, Tyler showcases his love for live-fire cooking; he’s such a grill geek that he has eight (!) live-fire rigs just outside his home kitchen. A strong advocate for sustainable beef, Tyler emphasizes his work with American ranchers and the importance of supporting small farms.
