Torantang 토란탕, beef and taro soup, is a quintessential Chuseok dish. Our ancestors knew that during Chuseok, the Harvest Moon Festival, we would be eating a lot. Taro is said to be good for digestion and taro and beef soup is meant to accompany all the other dishes so you can eat a lot without getting a tummy ache.
