OK, let me set the record straight: These are not the traditional Chinese kind of scallion pancakes, which are undeniably tasty but have a few steps and techniques that require a bit more patience than I usually have. When I’m in that mood, I turn to these babies. Crunchy exterior, pillowy interior with just a bit of chew (from the rice flour), and packed with scallions, cheddar, kimchi, and Spam. A dunk in a quick soy dipping sauce adds brightness. ’Cause honestly, who needs patience when you’ve got this level of yum at your very fingertips?
