Our kids eat so much bread and pasta that I like to offer a flour-free snack sometimes. These come together quickly and are g for breakfast, for lunch with soup, or for a packed snack in the car. It’s an adaptable recipe and I’ve made many variations throwing in bits of different vegetables, and the kids still eat them. I got the idea to make them in a blender from my friends Sonja and Alex Overhiser, cookbook authors behind the website A Couple Cooks; these recipes are inspired by their Healthy Banana Bread Muffins. I often top them with a sprinkling of oats, but you can get creative by stirring nuts or dried berries into the batter or putting them on top of the muffins before baking.
